
Watermelon Wedge Salad
Ingredients
- 1 mini watermelon (cut into 8 wedges)
- 1 avocados (sliced)
- 2 cups salad greens
- 1 cup mozzarella pearls
- 1 cucumber (sliced)
- ½ cup mint leaves
- ¼ cup olive oil
- ¼ cup balsamic vinegar
- salt & pepper
Directions
- Toss all ingredients together and serve immediately
Last year John and I were on vacation in Jacksonville Beach, Florida and on a day trip to St. Augustine we stopped at a local restaurant called Caps on the Water and I had the most amazing watermelon salad! It was sweet and refreshing and hit the spot after a long day in the humid heat and sun.
Everything about the restaurant felt like a dream and the idea of a salad primarily made of watermelon didn’t seem like much to write home about. Maybe it was amazing because we were sitting on a waterfront deck at sunset. Not even two days after returning home, I ran to the grocery store and collected watermelon, avocado and mozzarella. Sure enough, it wasn’t just the waterfront deck that made the salad so wonderful!
Start by cutting your watermelon. If you’d like to cut wedges I recommend getting a small watermelon. Or you can grab a full-sized fruit and cut squares or even use a cookie scoop to make melon balls. Next, toss it with a avocado slices, a handful of salad greens, mozzarella pearls and fresh mint or lemon balm leaves.
Lastly, dress the salad with olive oil, balsamic vinegar and season to your desired taste with salt and pepper. It’s easy, simple and such a nice treat for summertime!
