Sometimes the best things don't take much. Simple, summer kissed strawberries with homemade whipped cream. Enjoy!

Ingredients

  • 16 oz Strawberries (sliced)
  • 1 pint heavy whipping cream
  • 4 tbsp powdered sugar
  • 1 tsp vanilla extract
  • pinch of brown sugar

Directions

  • Whip the heavy cream, powdered sugar, and vanilla until peaks form
  • Serve with strawberries and a sprinkle of brown sugar

Strawberries and whipped cream is hands down my favorite sweet dish. It’s an easy two ingredients and tastes like summer!

My siblings and I grew up finding wild strawberries in the meadows and forest openings in North Idaho. There’s nothing in the world that’s sweeter than a wild strawberry that ripened in the morning sun. Our area is well-known for huckleberry picking, but it was the strawberries that never made it back to the house. Each plant would only bear two or three berries so you never would have opportunity to haul a couple gallons home. They’re were meant to be enjoyed while you were outside.

There are endless recipes that can be improved with strawberries, but they don’t need any help on their own. When I have a sweet tooth that needs satisfied, I usually lean on strawberries and whipped cream. For the cream, I take a hand mixer and whip a pint of heavy cream with four tablespoons of powdered sugar and a teaspoon of vanilla extract. I prefer my whipped cream sweet, so for a more traditional recipe, go with just two tablespoons of powdered sugar.
